Recipe: Rainy Day Chocolate Chip Cookies

As the nights begin to draw in and the mornings feel crisper, we start to crave those little ‘pick me ups’ or moments that spark joy. These can be the simplest things, from going to sleep with fresh crisp linen sheets to snuggling up with a warm cup of our favourite tea in the evening. Sometimes our little ones need those same moments that spark joy and one wonderful way of doing that is filling your home with the warming scent of homemade biscuits baking in the oven.

Baking can mean so many things to each of us. Whether it is our way of showing love to those that we care for most, or it is our way to have fun and spend time with our children. Well isn’t that the beauty of it? We could almost see baking as an art - interpret it however you wish and hopefully you find joy wherever you end up. Whatever baking means to you, here is a rainy day recipe for simple chocolate cookies. These definitely spark joy in our home - I hope that they do the same for you!

Rainy day chocolate chip cookies

Preparation: 20 minutes

Cook: 10 minutes

  • Perfect to make with young children
  • Perfect to eat with a cosy cup of tea

Ingredients

150g salted butter, softened
80g granulated sugar
80g light brown muscovado sugar
2 tsp vanilla extract
1 large egg
225g plain flour
½ tsp bicarbonate of soda
A pinch of salt
100g dark chocolate chunks
100g milk chocolate chunks

Recipe:

1 - Heat the oven to 190C/ fan 170C. Then line two large baking trays with non-stick baking parchment.

2 - In a mixing bowl, combine 150g salted butter, 80g light brown sugar and 80g granulated sugar and beat until creamy.

3 - Add in 2 tsp vanilla extract and 1 large egg and beat again.

4 - Sift in 225g plain flour, ½ tsp bicarb of soda & a pinch of salt. Mix these in with a wooden spoon or cake mixing spatula. 

5 - Finally, add 100g plain chocolate chunks & 100g milk chocolate chunks and stir until evenly distributed. At this point you may want to add a drop of milk or water if your cookie dough needs loosening a little.

6 - Make small scoops of mixture using a teaspoon and space each scoop apart on the baking trays. Try to leave plenty of room for the cookies to spread as they cook. This mixture makes up to 30 cookies.

7 - Place the trays of cookies in the oven and bake for 8-10 mins, or until they are light brown at the edges but still slightly soft in the centre. This will ensure lovely soft cookies.

8 - Leave the cookies to stand for a couple of minutes to set before lifting onto a wire cooling rack to cool completely.
